docs: move Laurent Goderre (LaurentGoderre) to Collaborator

To align with his role similar to other representatives of the docker-library/official-images program (Tianon Gravi (tianon) and yosifkit), and taking account of shift of focus away from active participation in this repo:

Laurent Goderre (LaurentGoderre) is moved from:

• Docker Maintainers

to

• Collaborators

Thanks to Laurent for continued support as part of the Docker official images program!

Motivation and Context

During a reorganization related to the Governance change from Docker Working Group to "open maintainer model" in February 2026, Laurent Goderre (LaurentGoderre) was moved from membership of "Docker Working Group Collaborators" to Docker Maintainers.

Laurent is active on the receiving side of PRs submitted to the https://github.com/docker-library/official-images/pulls list and is listed in CODEOWNERS for /library/node.

He was last active in the docker-node repo in June 2025.
